SAMAI { Little Millet }

Little millet (Samai) is a traditional crop in India that is well-known among health-conscious people due to the high nutritional value of these tiny grains. Little millet is a nutrient-dense food that is high in protein, fibre, minerals, iron, zinc, and calcium. It is a rich source of the essential amino acids Histidine, Methionine, and Phenylalanine,types of protein structures. This millet is a great source of Iron. 30 gms could provide upto 16% of the daily iron needs for an adult male. Like other millets, Samai is also gluten-free.but provides whole grain fiber which is otherwise lacking in gluten-free diets. Samai has a low to medium glycaemic index and  is diabetic friendly.

It is considered as a healthier alternative to white rice.

Small millet is a common ingredient in various regions of India, where it is used to prepare dishes like dosa, upma, and porridge. In addition, it can be used to make various baked goods like bread and biscuits.
