- Besan, also known as gram flour, is made from chickpeas and contains the following characteristics:
- High in carbohydrates
- High in fiber
- No gluten
- High in protein
- Rich in iron, potassium, manganese, copper, zinc, phosphorus, magnesium, folate, vitamin B-6, and thiamine
100 grams contains about 10 grams of dietary fiber and 22 grams of protein.
- According to the FSSAI, besan should meet the following standards:
- Ash insoluble in dilute hydrochloric acid – Not more than 0.5%
- Total ash – Not more than 5.0%
Foreign matter, other edible grains, and damaged grains shall not exceed 9 per cent by weight.
