These are dishes that travelled across cultures, evolved in Bengal, and found a cherished place on the festive table. The meal begins with *Cabin-style Chicken Croquettes* served alongside crisp potato fries, an iconic Kolkata cabin favourite that evokes the city's old-world eateries. A refreshing *Tetul Aamshotter Shorboth* follows, balancing sweet, tangy and smoky notes before the meal unfolds into *Chingri Pur Diye Potoler Dolma*, where pointed gourd is delicately stuffed with a rich prawn filling—an elegant example of Bengali refinement. The mains present two treasured recipes from the *bawarchikhana: a fragrant **Fowl Curry Qorma with Mini Parota, echoing the flavours of Mughlai and Nawabi kitchens, and a comforting **Mutton Stew with Baby Naan, inspired by the Anglo-Indian kitchens that became an integral part of Kolkata's culinary landscape.
