The Living Table is Pakadarpan’s (Paushtik Life's Organic Catering wing) humble effort to bring back fermented food on our tables. As Pakadarpan is trying to get back to the roots of traditional culinary practices, this is yet another attempt towards a healthy living. Fermentation isn't new. It's one of humanity's oldest food preservation methods, predating refrigeration by thousands of years. But somewhere between industrial food production and our modern obsession with sterility, we lost touch with the fermented foods that sustained cultures for generations. Canning of food came only with war.
