At Madhu's Kitchen, we invite you to taste the biryanis most people have never had. Four Corners, Four Forgotten Flavours This is not the biryani you order every weekend. We've travelled to the edges of the Indian culinary map to bring back the uncommon, less-eaten biryani varieties that rarely leave their home kitchens — each one a story of a region, a community, and a tradition passed down through generations. From coast to hinterland, north to deep south, every plate carries the signature of where it came from. A Rare Guest from Persia: Isfahan Beryani As a special highlight, we're honouring biryani's roots with the authentic Isfahan Beryani — a Persian delicacy from the historic city of Isfahan. Distinct from its Indian descendants, this rare dish is a reminder of where the whole beautiful journey began. The Sweet Secret: Apricot & Aloo Bukhara What truly sets this feast apart is the artistry in the details. Several of our biryanis are elevated with apricot purée and aloo bukhara (dried plums) — a touch of gentle sweetness woven into the spice, creating a depth of flavour you'll rarely find anywhere else in the city.
